In the UK, we don't have 60,000 years of indigenous food history to draw on. The Wild Biome Project is a celebration of how ingenious we can still be in transforming wild ingredients into something nutritious and tasty. These are eight-pink crackers. And then underneath you've got smoked pollock with blitzed up hazelnuts. Looking forward, May is a lovely month when spring is in full gear - there will be so many more plants to eat. I am so looking forward to them, especially things like wild strawberries and wild raspberries.
