Swan yay means like make it super nice. If you are a 40 seat restaurant and you're doing a tasting menu, right? And you have saddles of rabbit, for example, then you only have say eight center cut pieces. Someone else is going to have to get the end pieces. Unfortunately, that's going to be given to people that are in the importance list than just a regular person.
