The Different Meanings of Authenticity

John Sutter: You've talked about authenticity as a social construct. So I'd love to have you share some more insights into your research on restaurants and how violating a norm like say a health code might be okay or even rewarded because it somehow makes the restaurant seem more authentic. Sure. We can talk about authentic Sichuan restaurant or we can talk about a restaurant that has authentic food. They both are covered by the same term but they're very different meanings. And so in the studies we've done of you know people's interpretations of what's authentic in a restaurant, we actually didn't distinguish up front between those two very different meaning.
