The potato made its way round europe because it was so much more efficient in terms of producing the calories that people needed. It had a number of advantages over grains, none the least of which was that potatoes could be stored in the ground. So what at one point was the bulwark of the indian civilization becomes, in fact, food for exploited peoples who are very vulnerable and on the brink of disaster anyway.
