Starch Is Like Small Denominator Currency

Galactose fructose and glucose are the most common monosaccharides in food. Starch is an example of a carbohydrate that isn't sugar. No one calls it sugar probably because it's too big to bond with our sweetness receptors We have enzymes that break it right down into glucose so it affects us just like glucose, but on the way in we cannot taste starch as starch.
