World War one and two saw a lot of substitution of ingredients. Things like maize disappear, especially in World War two,. replaced by flake barley. Sugar, the amount of sugar used went down. malt was the thing they could get hold of. And also, malt isn't as useful for making food from where sugar and maize are.
