I Don't Peel My Carrots

We buy our carrots from a local vege supplier who doesn't use pester sides. We just did like, three days on the counter and then popped into the fringe so they kind of kept chilled this whole time. I think that a lot of vegetables have more em goodies on the outside of them, which held o the fermentation. So if you can avoid having to peel the carrots before you do it, then that will be best.
