How Do You Make Cider?
We have 38 varieties of apple trees in the field. 500 of the 750 are cider apples, and they're across the four taste profiles. We take our apples from the field, and we also forage for apples around the local,. I call them parishes, because it's lots of little hamlets around Newborough, over towards Abernathy. There are an abundance of apple trees, like hundreds of them. Sometimes we know what the varieties are, sometimes we don't, so each year we mix it together to hopefully keep the taste as consistent as the year before.
