Use it in recipes like when you're making homemade ricotta and you heat up milk. And then you add some acid and it curdles, that's how you make the little curds. You could also use it in place of the buttermilk when you make homemade creme fraiche. I don't think you're ever going to be able to go through a lot of it, but you could use some of it.
