There's a relationship between protein and DMS precursor as well, right? Oh, absolutely. Protein is, is a big determinant of protein and process basically are what determine how much DMS P you're going to find. As we kiln a little bit more aggressively, that combined with the, with the airflow allows us to push more of the reaction to DMS that's exhausted and then doesn't carry over into the brewing process.
