Miles wants to a big opportunity for specialty roasting brands who want to expand into the fine dining space. High in restaurants are very focused on provenance, which marries very well with the specialty coffees focus on traceability and transparency. As a former fine dining chef myself from way back, it's clear to me that we are now entering a golden era for fine dining and coffee.
