The Differences Between a Congress Mash and a Brewer's Mash
Congress mash is much thinner. Basically it's 50 grams of ground malt and 400 grams of water by the time you're done with the water additions. The other thing that's different about the Congress mash is you start off with half an hour at 45 C, considered to be the beta glucan rust. Most brewers don't even spend any time at that temperature anymore. And then Congress conversion is at 70 C for one hour and most brewers don't do that anymore.
