We cannot guarantee with any metaphysical certainty that the early universe did have a low enthropy, because we can't even guarantee there was an early universe. We're inferring what things were like on the basis of the light that we're observing to day. So it's not a completely circular argument, but it is a self consistent argument. And you know, it could be wrong.
