It tends to keep its colour and it's texture a lot better. I mean if it's something like me, it's as Claire will tell you, as soon as it starts to be really properly cooked so it's got all the lovely scrunchie, yummy browniness that we want. Once you get it out of the oven it starts to shrivel up and wrinkle and look really unappetising. In fact a lot of food, once you get it on the set it starts to sort of dry out and with vegetables they just keep their colour so much better. So it's to keep the sense of freshness in the form and the shape.

We tend to do a lot of sodas and coffees and all that kind of stuff as well and within that we could go down a whole other rabbit hole of styling for beverages. Oh how do you get the milk to come through the coffee just right? How do you do that? There's definitely using heavy cream versus regular milk. Sometimes we actually have to play with the density of the coffee itself, like sometimes we're trying to thin the coffee so it's not as dark. What

So that must be annoying. We use a lot of fake ice cubes depending on the job specifically and that's an art too. There's a place in New York, I'm sure this place is all over the world that make these cubes. They're like $80 each. Somebody actually got this solid cube of acrylic and polished it and shaped it to make this beautiful structure of ice that just sparkles in the most beautiful way and we have a whole collection of the different, oh some more like shards and some are more squares, some are, you know, because each client has their
