Posta Shapes - What's Missing?
There's a lot of shapes that like they look beautiful. But there are very few shapeshat that have the total package. So i walk marine through my rational i explain my three criteria for evaluating pasta shapes. I tell her about forkab sauceability and toothsink ability. And then the sixth shape is stracinati. Stracinati are shapes that are dragged over a textured wooden board, which imprit that texture on the pasta. Orecete are an example of strac inati.
