The Rise of Cow-Loss Dairy
California-based Perfect Days Milk Proteins are used to make modern kitchen cream and a new Mars chocolate bar. Cow-less dairy has emerged so quickly, in part because it uses some of the same long-standing fermentation processes that are used to making beer. Canada's dairy industry is made up of around 10,000 dairy farms they boast over $7 billion in annual sales.
