Always start with an NDA, not because you can't trust people, but because it spells out expectations. Having a contract that has been written by a lawyer and reviewed several times by several lawyers is also important. Always starting with expectations clearly spelled out for both parties is essential. Being honest about what you are capable of works best than trying to soften the blow or sandwich it between compliments just being really straightforward.
