I grew up literally like three blocks from a Krispy Kreme. When you see people eat it, you'll get what I'm saying with chewy. Hot and hot right out of the oven is the way to go. They have artisan cream cheeses and then you dip it in trout roe. It's crispy on the outside, doughy on the inside, and chewy. Don't get me the formula. But it's something about the ingredients or the way they're mixed.
