In the early fifties in the united states, a group of these younger men essentially started to meet at italian restaurants in little italy in manhattan. They saw it as a social group, but also a way of sharing knowledge. This small group became the society of flavor chemists,. In some cases risking their jobs at the flavor companies that they worked for which were very secretive. Your training is on the job, working alongside a master flavorist at a flavorer in fragrance company, or at some of the bigger food companies will have their own flavor divisions.
