We like to make peri as peri because it's a bit of a jewel in the crown. You can make it into lots of different like dry champagne or manner of stuff. The stuff that's perhaps not always so great, we blend in with the cider and we make something called pider. Dennis has climbed up an enormously steep mount to meet Tim Hovitt, who's an archaeologist with Herifatia County Council. And I'm at Snodhill Castle. It's a great name isn't it? We think it's to do with Snow Hill like Snowdon.
