The History of Salt and Vinegar

Salt was prized for its use in the preservation of foods long before we got fridges. Potato crisps or chips, as they call them in some countries, have to have salt and vinegar. Pepper is related to that, but also in classical Latin it was pepper,. But again, given its importance as a spice, less important, I think, in terms of food preservation - so many different languages. Vinegar goes back to the Latin for sour wine, venum, and then asa, meaning sour. We'd have to ask a purple chef to tell us why it's such a sort of wonderful marriage.
