The Stress of Working in a High Stress Industry
I started pretty much how a lot of chef start I started as a dishwasher and I worked up to a line cook. The thing that I miss most is the camaraderie and people that I used to work with. And I don't miss waking up at three in the morning wondering if I ordered cantaloupes or wondering if my dishwasher is going to fucking show up the next day. After the pandemic you saw prices of everything go up except for the wages sure kitchen staff. It became less about the food which is what I loved and more about the business and cost cutting.
