The money-ness of assets can evaporate very quickly, in which case you suddenly have a deflationary shock. The politicians are always thinking about how to boost the economy before the next election but they're likely to take inflationary risks that might be regretted after the next election. So outsourcing the job of controlling inflation to an independent central bank might seem like a reasonably sensible thing to do. But history hour would suggest that this kind of independence doesn't last forever.
