What's the Deal With Fiber?

Dr. B: Fiber is fascinating because it survives digestion through the entire small intestine and it arrives in the colon unchanged. When it gets to the colon, it undergoes a transformation that the human body is not capable of doing. We rely on these gut bacteria to do this. They change the fiber into something called a short chain fatty acid. And what we see are that people who have a healthy gut, they consume plant foods.
