Garum Socirum - The King of Sauces
It's a table sauce, finishing sauce, and you pour it on to cooked food. It just adds a real punch over of a different kind of umami and other food. We hear from marshall that oysters from lake lucrene in the bay of naples have arrived. They crave garum sociorum, which is the finest of the garum saucers. This may have been made from mullet blood and li and viscera rather than either mackerel or tuna. But he says, cook or kill in the garum of of our allies. Interesting, but it's one of these little throwaway lines in pliny. Ands go puzzle.
