Ketosis is the ability to process fat and mobilize your fat stores. The Inuit people say, well, they never go into ketosis because their ketones don't go that high. There's no such thing as an essential carbohydrate. If there were, and you wouldn't be here, right? All of our ancestors throughout the ice ages wouldn't have been here if it weren't for fasting.
