The Different Types of Roasted Coffee

The darker we roast the coffee, the more it starts to collapse then because caffeine isn't degrading. The relative content of caffeine there actually goes up. In a lighter roasted bean, technically or theoretically, there would be more trigonally in the whole mix. And chlorogenic acid is pretty unstable at these higher temperatures so maybe some of the beta carblines are too.
