If your choir has never sung a polyphonic ordinary before, let's say they've got some motet repertoire under the belt. Homophonies are our friend and really accessible keys like G major is always good. There's another piece again, which the St. Solsk Choir taught me, I would recommend it, the Cassiolini mass in A minor. The curios are very easy and not too polyphonic but the other movements are dense with more challenging polyphony.
