Artificial fats are essentially the fat equivalent of an artificial sweetener. The industry calls them fat replacers, which sounds a little more innocuous. They have all these really cheesy names, like simples or lycade or a celtro. But here's what kind of makes them insidious. You'll never see the word fat replacer or artificial fat. You won't even see that word simples. It's really weird. So it's really difficult to know when the the sensed properties of fat are being toyed with by food manufactures. Even then i would say you can't really tell by looking at the ingredient panel.
