Dr Phil Howell of Niaab in Cambridge is a time traveller in the world of wheat and a seeker of diversity. Our second finalist in the best food innovation category is also working with a wild resource, one that's now abundant in the forest of Boland in northeast Lancashire. This is a place surrounded by hill farming, Heather Moreland, an upland fell, but I'm being driven towards a dense section of Conifer, Gizban Forest to the north.
