How to Make High Quality Masa From High Quality Corn
The original idea of masa was to start kind of like a tartine bakery equivalent of of masa and dothias so i started researching for about six months just trying to understand what the landscape looked like. It turned out there were about three million farmers who happened to be preserving just like the highest quality corn in the world. The first thing i was blown away by was just the raw ingredient you know I hadn't really come into contact with what high quality corn looks like.
