The Importance of Food in the Italian Migration

Migration is particularly large in the years between 1870 and about 1910, when I think around 11 million Italians leave. Key destinations included a number of European countries, as well as the United States, Canada, and Latin America. The newcomers had to be pretty self-sufficient, clustering together in neighbourhoods where businesses opened up to meet their needs. For a good while, these foods remained largely a delicious secret within the new Italian neighbourhoods. Not many Londoners or New Yorkers would have tasted them,. except in time for a few wealthy people curious to tour the poorer parts of town.
