Wild turkeys look very different than what most people are used to seeing on their Thanksgiving table. They don't have the large breasts that are like a butter ball is going to have. And then as you said, the meat is darker because they're allowed to roam free. The downside of a bird that is training and exercising is that it is in fact a little bit tougher.
