The Second School of Tea

It seems like you would have these situations where foreign power would take control for a while and just tea popularity would wane. But then when inevitably Chinese rule was restored in these areas, you would see the reverse. It's also during this time period, Martin writes that we enter the second school or phase of tea. This is what we typically call matcha tea today.
