The History of Frying Chicken

The first recipe that we seem to have for fried chicken was written by some called mary randolph, who was a white woman from a slave holding family in virginia. She liked to fry her meat in a deep pot of bubbling lard, and that recipe came out in 18 24. And then on the other side of the potomac river, in maryland, cooks preferred to shallow fry the meat, serving it with a white gravy. Those are the two traditional methods of fry nchicken that became established.
