Are Nuts Always a Calorie?
Anthropologist Richard Rangam is the author of Catching Fire, How Cooking Made Us Human. He and his colleagues have been figuring out just what cooking does to different foods. They've found that cooked food produces more energy for humans than raw food. And they think they know why - it's because cooking changes the structure of the starch. But this might not seem so relevant if you're eating a tartar tubers where 40% calories are added as opposed to 10%.
