Early colonists drank a lot of alcohol, like folks in europe did. And then they started switching to the new and exciting tea and coffee. The civil war helped make coffee the drink of the american people. There was a huge amount of emigration from the coffee drinking cultures of southern and eastern europe. So you have a lot of people with a taste for coffee. We reckon that the average soldier on union side was getting through ten cups of coffee a day.
