Alexis madrigal talks to mioko shinner, founder of mioko's creamery in northern california. i was a huge cheese offician atto before i became vegan. My lifelong goal was to figure out how is it done, and can the same techniques be applied to plant milks? And so we have a variety of cheeses that they're all fermented, just like dairy cheese. I think it's its inspired a lot of smaller cheese makers the world over.
