Alex's methods include traditional techniques used for meat, but applied to vegetables. When cooking carrots and when we're cooking a lov root vegetables, we cook them very precisely to 88 degrees. And 88 degrees is the temperature at which the plant structure starts to break down. These new dishes created by alex, i literally couldn't imagine what they would taste like - far cry from over cooked brussels sprouts.
