Dried sugar can be extracted in two ways: removal of water from the filter plant or natural evaporation. Natural drying can be a huge time and labor sap to do. Just like a cup or two of salt can take multiple weeks. And reducing energy cost either means expensive vacuum distillation equipment or labor and space intensive natural drying.
