There's a lot of chocolate in this book. I will say the french, the french really love their chocolate. And the parisians really love theirocolate. So i have a big chapter in the book on chocolate cakes. In the night i looked and i realize i have chocolate cakes in almost every chapter. But to me, that kind of reflects paris, because you can walk two blocks in paris and you'll hit an incredible chocolate shop. There's another recipe in here that looks super simple but crazy delicious, called fendant balois. Tell us what that is.
