The dogma is that one enzyme molecule will catalyze the speed of one reaction. In fact, many enzymes sometimes make mistakes because of issues in their structure and their motion. And this is very important for evolution because what happens if you want a new enzyme catalyzing a new reaction? Where does it come from? Does it just form and you get lucky?
