One third of all edible produce is thrown away globally, according to the u.N. Preserving and storing large quantities of food has been essential to the development of human civilization. It was a vital way our pneumadic a s were able to stay on the move and survive through tough seasons and harvests when food was scarce. We're not suggesting you start eating fruit that's gone bad, or ignore sell by dates but this is a subject that's certainly given me a lot of food for thought.
