Is There a Balance Between Antioxidants and Antioxidant?

There seems to be a very delicate interplay here between oxidative stress by a non-evolutionarily appropriate levels of polyunsaturated fats and the body's ability to cope with it. Glutathione is the most important intracellular antioxidant, which is derived from the protein that you eat, but also in the blood. The major antioxidants in the blood are the sulfur groups of the proteins in your blood. A study on antioxidants that doesn't include protein is pretty misguided.
