The Original Heart of Real Gravy
Gravy is a hot mulsified sauce made by combining fat, starch and then some glutemate flavored liquid. A gravy is usually based on the fond left over on the bottom of the pan after you have cooked meat via some dry heat method,. roasting or pan frying. As these juices are cooked under high heat, their water content evaporates and they undergo browning. So to make a traditional gravy, after you roast or pan fry a piece of meat, you'll have all this extremely flavorful gunk stuck to thebottom of the pan.
