How to Write a Cocktail List That Balances Different Needs
A cocktail list should have, I don't know, a dozen cocktails on it. As many as can plausibly be made by your bartenders at a given time. Don't make a 40 cocktail list if the act of making those cocktails is going to be so onerous for your bar staff. A relatively concise eight to 12ish cocktail list that's balances a lot of different needs.
