Carnavalier takes place right before Ash Wednesday, which is when the Europeans used to feast and basically do the most. As soon as this Carnival is done, we have to start projecting for our next year because it's like a rule of calendar throughout the year. "We have to always be on the ball to get what we need to get," he says.
