Bacteria don't like acidic environments, so they're far more often found in soils above 7 pH. And like our plants, bacteria try to keep an environment that meets their needs. So the more bacteria, the more slime, the more the soil will stay above7 pH. If the soil is say 5 pH, very little of the ammonium is converted,. locking up the potential nitrogen for the plants that would be looking for ammonia.
