Celery Soup, Ingredients
Celery soup can be made brown instead of white by emitting the cream and coloring it a little. When celery cannot be procured, half a dram of the seed finely pounded will give a flavor to the soup if put in a quarter of an hour before it is done. Seasonable from September to March, sufficient for ten persons. Average cost, one shilling per quart. The accompanying illustration represents a pretty winter ornament, obtained by placing a cut from the top of the carrot root in a shallow vessel of water.
