Wired is the first CRISPR edited salad. It's already happening in some restaurants, and it's coming soon to grocery stores. People don't eat mustard greens because they have a really bitter peppery flavor. So what they're doing with this gene editing tool is basically removing the gene that would make them taste bitter. But often those bitter compounds are the very thing that makes it healthy.
